blueberries and lemons

yesterday was kinda crummy-the weather was blah, i wasn’t feeling too good, i found out Hannah Montana is going to beat me to the alter. on the bright side i was feeling really stylish in my brand-new-super-comfy maxi skirt…until lunch time came and i got three big oil stains on the skirt-yup.

anyway…i tried to get domestic. it kind of worked..one of those tastes way better than it looks things. IMG_2571 it did look like a delicious giant muffin-i love muffins-but then i took it out of the panIMG_2575 that my friends is a blueberry-lemon-yogurt loaf and it is delicious. the yogurt makes it SO moist. you can find the recipe here…yeah i know mine looks nothing like that. oh well.
…and just for the record DAWN dish detergent works on ducks threatened by oil spills and jersey-knit skirts ruined by an oily lunch.

holy banana bread batman!

i ate this weekend…and i ate alot. i ate some chunky monkey ice cream. i ate a burrito from cafe rio (holy delicious!). i ate fried ice cream. i ate blueberry morning cereal. i ate waffles and hash browns at a potluck i ate bread that lovely ward members gave me as i passed out nice notes. i ate some other stuff i cant remember.
….and i made some stinkin’ delicious banana bread…and then i ate it. but not just regular old banana bread…peanut butter cup banana bread. you take your average banana bread recipe, add some peanut butter and then throw in some of everyone’s favorite candy-reese’s peanut butter cups!
IMG_4063 go ahead and try and tell me that doesn’t look amazing…i wont believe you, because it was absolutely divine. the only thing i will change next time {because there will be a next time} is more peanut butter cups.

What’s Cookin?

I don’t know why I didn’t think healthy food could taste good…but let me tell you it can. Something that I have always enjoyed doing is cooking with mom-it’s a great time for bonding. I’ve decided that I liked this Sunday’s lunch so much that I wanted to share it with all 12 people that read this thing. What is this meal you ask…ground turkey and humus wrap with a side of baked sweet potato fries. This isn’t really a recipe though…more of a how to guide-since mom doesn’t really use recipes.

It starts like this:

You take a raw sweet potato and cut them into french fry like pieces (be careful sweet potatoes aren’t as soft as you would think.) Then you take the pieces, put them in a bowl and throw in a tablespoon of olive oil and a little salt and pepper. Take some tongs and toss it all together. If you need to add more olive oil go for it but just dont soak it too much.

Next you single layer them on a cookie sheet and bake them at 450 degrees. After 10 mins shake ‘em around and flip ‘em over then cook for another 10 min. then take ‘em out and enjoy.

While you fries are doing their thing in the oven, cook up some ground turkey and season however you like, we like it spicy and use creole seasoning in addition to the normal salt&pepper. While that’s getting cooked up and your sweet potatoes are in the oven (don’t forget to keep checking this stuff so it doesn’t burn…unless you like your food extra extra crispy, then go for it) spread some humus over a wheat tortilla like so:

again we like it spicy so we use 40 spice humus (as seen by the little dots in there) but you can use whatever you like.

Finally add the ground turkey and whatever toppings you think will make it extra delicious and then roll it up.

Add your fries to the plate, sprinkle them with a little nutmeg and enjoy. Try it…trust me it’s delicious and super easy!
